American Style Pancakes with Blueberry Sauce


When I was a kid my amazing Mum who had recently been widowed, decided to take me and my sisters on a road trip around 1 corner of America & into Canada. Bearing in mind we'd never gone anywhere other than to the Isle Of Wight before, it was a pretty incredible thing for us to do - we experience things beyond our wildest dreams. From the sights of Niagara Falls to sitting in Howard Johnson diners eating a pile of pancakes for one, that could feed a family of 4. Everything to us was just so big and boundless and beautiful. The pancakes we ate were stacked about 6 high and accompanied by a ball of butter and maple syrup! I think it was all I really ate for 2 weeks - I mean why would you want anything else aged 12?! 


The Pancakes I now make are just as tasty in my 55 yr aged opinion! But packed full of nutrients and with only the sweetness of a banana and blueberries, plus loaded with healthy fats and proteins - it's a win win.  




Using a blender like this also makes it soo quick and easy but you could also just mix it using pre milled flours.  This will serve 3 peeps, post a massive workout or up to 5 portions for pre workouts or rest days. You can also keep the batter in the fridge for 2 days so it's ready for breakfast the following morning. 


Ingredients... 

100g oats or oat flour 

25 g of almonds, ground 

25 g of milled flax and or chia seeds

25 g of hemp protein powder (if you don't have just add more chia/flax instead)

Teaspoon baking powder 

1 large ripe banana 

175 ml milk of your choice (I used oat) (add more if you like your pancakes thinner) 

2 large eggs 

Pinch of salt 


For the Blueberry sauce 

200g frozen blueberries 

1/2 teasp coconut oil


Method

Add all the pancake ingredients into a blender and blend until finely mixed. Should only take a few seconds. Heat a pan - I use a non stick pan that doesn't require any fat. If you don't have one, use a small amount of high temp burning oil, coconut is ideal, but drain off any excess - you don't want your pancakes swimming in it. You want to get your pan really hot but then turn the heat down whilst the pancakes are cooking. Poor your pancake batter into the pan - I like to get 3 pancakes in at a time which means they are not circular! If you have more time you can be a bit more specific . When you see little bubbles appearing on the top of the pancake, they are getting ready to flip over, Check first that the bottom is solid before you flip them - use a wide spatular.



Whilst you pancakes are cooking. Put your blueberries into a pan to cook down, on a low heat. Once they are soft and bubbling, add the coconut oil to give it a wonderful saucy sheen and added flavour.



Pile your pancakes onto a plate - I do 2/3 per serving, add the blueberry sauce and serve with a dollop of Greek yoghurt. This is a great post or pre workout meal, giving you all the nutrients you need with healthy carbs, protein and fats plus the goodness of berries, flax, chia and almonds. Honestly it will feel decedent! Eat alone if you can! If not, make sure it's with some one who totally gets it! 😉🫐🥞🇺🇸💞
